Dinner

It’s been about 60 for the last few days and I have been craving soup.  Lentil soup, pear and butternut squash soup, black bean chili, mushroom chowder and home made rolls, etc.  I made lentil soup for dinner tonight.   I take no credit for this because it came from Anna Thomas but it’s too good not to share.

Lentil Soup

2 1/2 cup lentils (I used french green lentils)

1 1/2 quarts water

Pinch of salt

1 large onion chopped

4-6 cloves garlic

olive oil

28 oz can whole tomatoes, reserve the liquid

3/4 teaspoon cinnamon, ground ginger, cloves (you can toast your spices for extra flavour)

2 teaspoons ground cumin

1 jalapeno (keep the seeds for heat if you want)

2-3 bay leaves

1/4ish cup parsley

1/4ish cup cilantro

lemon juice

red pepper flakes and paprika

Bring the water to a boil, add salt, and lentils.  Simmer for about 45 minutes.  Chop the onion and saute in oil w/garlic.  Add the spices and saute until the onion just begins to colour.  Add this to the lentils.  Open the can of tomatoes and crush the whole tomatoes between your fingers.  Add the cilantro and parsley and let simmer for about another 45 minutes.  If you need to add more liquid add the juice from the can of tomatoes.  At some point about halfway through (or so) I added some red pepper flakes because the soup was not spicy enough for me then a little while later added a few pinches of paprika.  Just before turning off the heat add a couple tablespoons of lemon juice.

I debated roasting some broccoli but settled on crusty, seedy, whole grain bread and butter.  My belly is very happy.
